Roasted Delicata with Goat Cheese and Balsamic Glaze

  • 2 whole delicata squash
  • 1 whole red onion
  • 2 tbsp olive oil
  • 4 oz goat cheese, crumbled
  • 2 tbsp balsamic glaze
  • 1 pinch salt
  • 1 pinch black pepper
  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut the delicata squash in half lengthwise and scoop out the seeds. Slice into 1/2-inch thick half-moons.
  3. Cut the red onion into wedges.
  4. Toss the squash and onion with olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
  5. Roast for 25-30 minutes, flipping halfway through, until the squash is tender and caramelized at the edges.
  6. Transfer to a serving platter. Crumble goat cheese over the top while still warm.
  7. Drizzle generously with balsamic glaze. Serve immediately.
