Roasted Delicata with Goat Cheese and Balsamic Glaze
Ingredients
- 2 whole delicata squash
- 1 whole red onion
- 2 tbsp olive oil
- 4 oz goat cheese, crumbled
- 2 tbsp balsamic glaze
- 1 pinch salt
- 1 pinch black pepper
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Cut the delicata squash in half lengthwise and scoop out the seeds. Slice into 1/2-inch thick half-moons.
- Cut the red onion into wedges.
- Toss the squash and onion with olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
- Roast for 25-30 minutes, flipping halfway through, until the squash is tender and caramelized at the edges.
- Transfer to a serving platter. Crumble goat cheese over the top while still warm.
- Drizzle generously with balsamic glaze. Serve immediately.
