Fried Gnocchi Salad

  • 1 lb potato gnocchi
  • 5 oz baby arugula
  • 3 tbsp olive oil
  • 4 oz goat cheese, crumbled
  • ½ cup figs or dates
  • 3 tbsp balsamic glaze
  1. Heat olive oil in a large skillet over medium-high heat. Add gnocchi and fry until until golden and crispy on all sides.
  2. Mix together all the ingredients. Serve while the gnocchi is still warm and crispy.
