Fried Gnocchi Salad
Ingredients
- 1 lb potato gnocchi
- 5 oz baby arugula
- 3 tbsp olive oil
- 4 oz goat cheese, crumbled
- ½ cup figs or dates
- 3 tbsp balsamic glaze
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add gnocchi and fry until until golden and crispy on all sides.
- Mix together all the ingredients. Serve while the gnocchi is still warm and crispy.
